Organic Pico De Gallo Recipe

My seven year old doesn't care for pizza, which is what most birthday parties in his age group seem to have, so when it came to having his party, we went with chicken tacos, guacamole, and this great Pico de Gallo recipe.

It was a huge hit with both parents and their kids and I'm happy to share it with you.

We had a little left over the next day, as we made a few batches of it, and added it to our scrambled eggs with a little cheese, and had a great breakfast using it too.

Preparation Time: 15 minutes Serves: 2

  • 4 organic plum tomatoes (medium diced)
  • 1 tsp organic pepper
  • 1 tsp salt
  • 1 tsp organic sugar
  • 1 tbsp organic cilantro, minced
  • 1/2 organic lime, juiced
  • 1/4 organic jalapeño, minced
  • 1/2 organic red onion, minced
  • Organic tortilla chips as desired

In a medium sized bowl, combine all ingredients. Mix well to combine.

Refrigerate at least one hour to allow the flavors to mix. Serve with tortilla chips if desired. If you like yours extra spicy, double the amount of jalapeños listed.  Be careful when cutting your jalapeo not to touch your eyes or lips!
